Hồi Hương – Smoked Salmon

Sapa is the only place in Vietnam where they can catch salmon with sweet and firm tender pink flesh, and low in fat. It is crafted from fresh Sapa salmon, coated with salt and herbs for 7 hours, then smoked using Shan Tuyet tea and local herbs.

When served, the fish is placed on a bed of salt, tea leaves, cinnamon, star anise, lemongrass, and various herbs, then infused with aromatic rice wine right at the table. The fragrance from the herbs and wine blends harmoniously with the rich, juicy salmon. Once cooked, the fish is skinned, sliced, and served tableside with fresh lemon and a special chẩm chéo dipping sauce.
