The Catfish & Pickled Bamboo Hotpot blends the tender sweetness of freshwater catfish with the refreshing acidity and crisp texture of bamboo shoots—creating a dish that feels both familiar and comforting like a home-cooked meal, yet intriguing and memorable like a journey into the highland culinary past.

Freshwater catfish (cá lăng), a river species known for its firm, lean meat and lack of small bones, thrives in fast-flowing mountain streams. Only the freshest fish are selected: cleaned thoroughly, filleted, and sliced into pieces that cook evenly in the hotpot. When dipped into the bubbling broth, the fish turns ivory white within seconds, retaining its natural sweetness and gentle richness. Each bite melts softly, leaving a clean, lingering finish unlike most common freshwater fish.

The sourness of bamboo shoots balances the richness of the fish, awakening the palate and giving the broth a refreshing brightness. Lightly simmered until perfectly tender, the bamboo retains its signature crunch, creating a delightful contrast with the soft fish.

A proper broth must be clear, naturally sweet, and harmoniously sour-spicy. Its depth often comes from simmering catfish bones, pork marrow bones, or chicken bones with vegetables such as onion, tomato, and pineapple. Pineapple, an essential ingredient, gently softens the fish while adding aroma and a mild acidity. To build the signature Northwest fragrance, spices like doi seeds, mac khen, and golden fried garlic are indispensable.

The broth is then seasoned with bamboo shoot extract, a touch of roasted chili oil or satay, giving it a warm, tingling heat—perfect for cool evenings. When everything comes together, the hotpot glows a light golden hue, with a delicate sourness from the bamboo, deep sweetness from the bones, and a gentle spice at the tip of the tongue.

Across different regions, cooks may add their own interpretations using additional highland spices, but the essence remains the same: a balanced, fragrant, and soul-warming dish that is both comforting and full of character.
